Chicken Afritada Ingredients:
- Sliced chicken
- Onions & Garlic
- 200 grams Carrots & Potatoes
- Tomato Paste
- Red Bell Pepper
- Green Peas
- Chicken Broth or Chicken Cube as alternative
- Bay leaves
- 300 ml water
- 1 tbsp sugar
- 2 tbsp cooking oil
- ground pepper
- Heat the cooking oil
- Fry the chicken for 3 minutes on each side or until light brown
- Set aside for a while.
- Saute garlic and onion for 1 minute or until light brown
- Add the tomato paste
- Add water & stir it.
- Add the chicken broth or cubes & the bay leaves
- Add the chicken and mix it well
- Cover & let it boil. Simmer for 15 minutes or until meat become tender.
- Add the potatoes and carrots and mix it well.
- Simmer for 8 minutes.
- Add the green peas, red bell pepper, sugar and ground pepper.
- Simmer for 3 minutes.
